Original Prosciutto Risotto

Original Prosciutto Risotto 

Serves: 4

Ingredients:

  • 4 slices Original Prosciutto, cut into strips
  • 4 T olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 225 g (8oz) button mushrooms, sliced
  • 225g (8oz) risotto rice
  • 7ml (5 T) dry white wine
  • 900 ml (1 H pints) hot chicken stock
  • 1 T freshly chopped parsley
  • fresh squeeze lemon juice
  • salt and pepper

Preparation:

Heat the oil in a pan, cook the onion and garlic until soft but not brown. Add the mushrooms and toss for an additional two minutes. Add the rice and stir to coat with the oil. Pour in the wine and a little stock until absorbed. Add the remaining stock and continue to cook until the rice is tender and the risotto has a creamy consistency. Sprinkle with parsley and gently stir the Original Prosciutto through the rice. Season with salt and pepper and squeeze of lemon juice. Serve with grated parmesan cheese if desired.
