Butter-Roasted Green Beans with Tart Cherries, Almonds and Goat Cheese

  • INGREDIENTS
  • 3 lb (1.5 kg) green beans
  • Trimmed 1/2 cup (125 mL) diced shallots
  • 3 tbsp (45 mL) butter
  • melted 2 tbsp (30 mL) grainy mustard
  • 1 tbsp (15 mL) finely chopped fresh thyme
  • 2 tsp (10 mL) honey
  • 1 tsp (5 mL) finely grated orange zest
  • 3/4 tsp (4 mL) each salt and pepper
  • 1 1/2 cups (375 mL) pitted sour cherries
  • 1/2 cup (125 mL) crumbled goat cheese
  • 1/2 cup (125 mL) toasted slivered almonds
  • 1 tbsp (15 mL) finely chopped fresh chives

 

PREPARATION

Preheat oven to 450°F (230°C). Toss together green beans, shallots, butter, mustard, thyme, honey, orange zest, salt and pepper.

Arrange in Lagostina Martellata Hammered Copper Roaster; sprinkle cherries over top.

Cover and roast for 12 minutes. Uncover and roast for 8 to 10 minutes or until beans are tender-crisp and cherries have softened.

Sprinkle with goat cheese, almonds and chives before serving.


Tip: Substitute chopped pecans or hazelnuts for almonds if desired. Finish with a squeeze of lemon for an extra-tart finish.
