Before First Use: Give your new set a quick wash before cooking your first meal, and clean it well between uses so it’s always ready for the next family dish.
For Browning, Sautéing & Searing: Start with ingredients at room temperature and pat them dry to reduce splatter. Warm the pan over low to medium heat first and when a drop of water dances across the surface, it’s ready. Add a little oil to lightly coat the pan, then place your food in once the oil is hot. You should hear a gentle sizzle. Let the food cook undisturbed; it will naturally release from the pan when it’s ready to turn. The flavorful bits left behind can be turned into a simple sauce by adding wine or stock.
For Oven Cooking: Your pan is oven and broiler safe up to 400°F, making it perfect for finishing dishes in the oven.
A Few Helpful Tips: Avoid leaving an empty pan on a hot burner (except when briefly preheating), as overheating can cause discoloration. To help keep the interior looking its best, bring liquids to a boil or allow food to start cooking before adding salt. Small marks or spots won’t affect cooking, but these simple steps help keep your pan looking beautiful for years of meals to come.
Keeping Your Lagostina Looking Its Best: With a little everyday care, your Lagostina cookware will stay beautiful and ready for many family meals to come. After cooking, allow the pan to cool before cleaning. Rinse away any leftover food with warm water, then wash with warm soapy water using a sponge or soft cloth. For tougher messes, a nylon scrubbing pad can help. Rinse well and dry right away to keep the surface looking spotless.
Hand Wash Only: To preserve its elegant finish, handwashing is recommended.
For Burnt or Stuck-On Food: Sprinkle baking soda over the surface, add some water, and bring it to a gentle boil. Use a wooden spoon to help loosen any stuck food, then wash as usual.
For Tough Marks or Cooking Residue: Marks from browned food, fats, or proteins can happen with everyday cooking. To refresh the pan, use a gentle, non-abrasive cleaner such as the Lagostina Cookware Cleaner, Bar Keeper’s Friend®, or Bon Ami®. Mix the cleanser with a little water to create a paste, apply it with a soft cloth or sponge, and rub gently in a circular motion. Rinse with warm water and dry. Repeat if needed.
For Color Changes: Occasionally, high heat may leave blue or rainbow coloring on stainless steel. Simply wipe the surface with white vinegar using a sponge or soft cloth to restore its shine.
For Cloudy White Spots: Hard water can sometimes leave spots behind. Boil a simple mixture of equal parts white vinegar and water in the pan, then rinse and dry.
Helpful Tips: Avoid using oven cleaners, steel wool, harsh detergents, or cleaners containing bleach or peroxide, as they can damage the pan. Nylon scrubbing pads are safe for stainless steel surfaces. And remember—never place a hot pan under cold water, as the sudden temperature change may cause warping.
