Ingredients and Method

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • Zest of 1 lemon or orange
  • 2/3 cup extra virgin olive oil
  • 2/3 cup whole milk (or plant milk)
  • 2 eggs
  • 2 tbsp lemon or orange juice
  • 1 tsp vanilla extract
  • Powdered sugar
  • Poached citrus slices or fresh berries
  • Whipped cream

Method

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, mix sugar and zest with your fingers until fragrant.
  4. Add olive oil, milk, eggs, citrus juice, and vanilla. Whisk until smooth.
  5. Add dry ingredients to wet and stir until just combined—do not overmix.
  6. Lightly grease the Dutch oven with olive oil or line the bottom with parchment paper.
  7. Pour the batter in and smooth the top.
  8. Bake uncovered in the center of the oven for 35–40 minutes, or until golden and a toothpick inserted comes out clean.
  9. Let cool in the Dutch oven for 15 minutes.
  10. Lift out gently or slice directly in the pot to serve.
