Ingredients

  • 4 boneless, skinless chicken thighs or breasts.
  • 1 cup cherry tomatoes
  • ½ cup black olives (pitted)
  • 1 yellow bell pepper (chopped)
  • 1 zucchini (sliced)
  • 1 lemon (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • fresh parsley for garnish

Method

  1. Sear: Heat olive oil in the large hammered sauté pan over medium-high heat. Season chicken with salt and pepper, then sear for 5–7 minutes per side until golden. Remove and set aside.
  2. Sauté: In the same pan, add the peppers and zucchini. Cook for 3–4 minutes until slightly softened.
  3. Combine: Add the garlic, tomatoes, olives, and lemon slices. Stir for 1 minute until fragrant.
  4. Simmer: Place the chicken back into the pan, nestling it among the vegetables. Cover with the lid and simmer on medium-low for 8–10 minutes until the chicken is cooked through.
  5. Finish: Garnish with fresh parsley and a squeeze of extra lemon juice.
