Ingredients and Method

Ingredients

  • 2 bunches rapini
  • 400g orecchiette pasta
  • 2–3 Italian sausages, crumbled
  • 2 garlic cloves, sliced
  • 3 anchovy fillets
  • Pinch chili flakes
  • Olive oil
  • Splash of white wine
  • Parmigiano Reggiano, grated
  • Salt

Method

  1. Blanch rapini in salted water (45 sec). Blend with a drizzle of olive oil, a ladle of cooking water & pinch of salt until smooth.
  2. Cook orecchiette in the same pot.
  3. In a hot sauté pan, add olive oil, garlic, anchovies, chili flakes. Stir.
  4. Add sausage, cook through, then deglaze with white wine. Stir in rapini purée.
  5. Toss pasta into sauce with a splash of pasta water until glossy.
  6. Finish with Parmigiano.
  7. Hearty. Simple. Bursting with flavour.
