Spring Frittata

Lagostina Spring Frittata
Ingredients
- 8 eggs
- 1 leek, sliced thinly
- 1 Cup snow peas, trimmed
- 1 cup green peas (fresh or frozen)
- 1/2 teaspoon chilli flakes (adjust to taste)
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh herbs (dill, parsley), chopped for topping
- 2 tablespoons olive oil
Method
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, crack the eggs and whisk them together. Season with salt, pepper, and chilli flakes. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the sliced leeks and cook until they soften, about 3-4 minutes.
- Add the snow peas and green peas to the skillet. Cook for another 2-3 minutes until they are slightly tender but still crisp.
- Pour the whisked eggs over the vegetables in the skillet. Stir gently to distribute the vegetables evenly throughout the eggs.
- Sprinkle the crumbled feta cheese evenly over the top of the frittata.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is lightly golden brown.
- Once the frittata is cooked through, remove it from the oven and let it cool slightly for a few minutes.
- Sprinkle the chopped fresh herbs (dill, parsley) over the top of the frittata before serving.
- Slice the frittata and enjoy!
