Braised Giant Lima Beans and Italian Sausage

Braised Giant Lima Beans (Butter Beans) and Italian Mild and Spicy Sausage
Ingredients
- 1 1/2 cups dried giant lima beans
- 1/3 cup extra-virgin olive oil
- 1 cup finely diced cooking onion
- 3 tbsps tomato paste
- 1 cup cherry tomatoes
- 3 celery stalks cut in 1 inch sticks
- 1/4 cup roughly chopped celery leaves
- 2 1/2 cups water
- 1 bay leaf
- 1 tsp sea salt
- 1/4 tsp ground black pepper
- 3 mild Italian sausages
- 3 spicy Italian sausages
Method
- Place lima beans in a large bowl and cover with cold water. Let soak over night or up to 24 hours.
- Preheat oven to 350 F.
- Heat oil in large pot over medium heat. Add onions and sauté for 2-3 minutes until onions are soft and translucent.
- Add in tomato paste and cook for one minute until melted and aromatic.
- Add in tomatoes and cook for 2 minutes until tomatoes have slightly softened.
- Add in celery and leaves and stir until until well coated.
- Add in water, bay leaf and season with salt and pepper.
- Bring sauce to a boil. While sauce boils, drain and rinse beans. Discard any skins.
- Turn off burner and add in beans. Nestle sausages on top and cover pot with lid.
- Place in preheated oven and cook for 1 hour or until beans are tender.
- Increase oven to 500 F and remove lid. Bake until sausages are golden and brown.
- Transfer pot to table and serve with extra pepper, radishes, olives, arugula and your favourite crusty bread to mop up the sauce.
