Ingredients and Method

Ingredients

  • 12 oz (340g) spaghetti
  • 1 lb (450g) shrimp, peeled and deveined
  • 2 cups tomato puree
  • 1 medium white onion, finely chopped
  • 3 cloves garlic, sliced
  • 1/4 cup vodka
  • 1/2 cup heavy cream
  • 1 tsp chili flakes (adjust to taste)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

Method

  1. In a large pan, heat 1 tablespoon of olive oil over medium heat.
  2. Add the shrimp, season with salt, and cook until they turn pink and opaque (about 2-3 minutes per side). Remove the shrimp from the pan and set aside.
  3. In the same pot, add the remaining tablespoon of olive oil.
  4. Add the chopped onion and cook until translucent, about 5 minutes.
  5. Add the garlic and chili flakes, and cook for another 1-2 minutes until fragrant.
  6. Pour in the vodka, stirring to deglaze the pot, and cook for about 2-3 minutes until the alcohol has mostly evaporated.
  7. Add the tomato puree to the pan and stir well.
  8. Season with salt and pepper to taste.
  9. Pour in the heavy cream and mix until the sauce is well combined and creamy
  10. Meanwhile, cook the pasta according to the package instructions until the pasta is al dente.
  11. Add the cooked shrimp and the pasta to the pan. Stirring to combine and heat through for about 2-3 minutes.
  12. Taste and adjust seasoning with more salt, pepper, and chili flakes if needed.
  13. Remove from heat and transfer to a serving platter. Topped with chopped parsley and enjoy!
