Classic Fettuccine Alfredo

Ingredients and Method


  • 400g fettuccine pasta
  • 1 cup Parmigiano-Reggiano cheese, finely grated
  • 1/2 cup unsalted butter, room temperature
  • Salt, to taste
  • Pepper, to taste


  1. Bring a large pot of salted water to a boil.
  2. Cook the fettuccine according to the package instructions until al dente.
  3. Reserve about 1 cup of pasta cooking water before draining.
  4. Add the butter into a large bowl, top with drained pasta, parmesan cheese and salt.
  5. Use a tongue or two forks and toss the pasta vigorously. Slowly add the reserved pasta cooking water, a little at a time, while continuing to toss.
  6. Toss until the sauce becomes creamy and clings to the noodles.
  7. Serve the pasta immediately with some freshly ground black pepper on top and enjoy!
