Lagostina Spring Frittata

Ingredients and Method


  • 8 eggs
  • 1 leek, sliced thinly
  • 1 Cup snow peas, trimmed
  • 1 cup green peas (fresh or frozen)
  • 1/2 teaspoon chilli flakes (adjust to taste)
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh herbs (dill, parsley), chopped for topping
  • 2 tablespoons olive oil


  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, crack the eggs and whisk them together. Season with salt, pepper, and chilli flakes. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the sliced leeks and cook until they soften, about 3-4 minutes.
  4. Add the snow peas and green peas to the skillet. Cook for another 2-3 minutes until they are slightly tender but still crisp.
  5. Pour the whisked eggs over the vegetables in the skillet. Stir gently to distribute the vegetables evenly throughout the eggs.
  6. Sprinkle the crumbled feta cheese evenly over the top of the frittata.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is lightly golden brown.
  8. Once the frittata is cooked through, remove it from the oven and let it cool slightly for a few minutes.
  9. Sprinkle the chopped fresh herbs (dill, parsley) over the top of the frittata before serving.
  10. Slice the frittata and enjoy!
